You start by creating a tunnel that is 5 tiles long. Use the track removal tool to remove the unwanted end of the tunnel along with 1 more tile, to ensure that the entire tunnel is not removed.
Then, you can do whatever you like to the tunnel. You can use the terrain tools to create slopes. Also, be aware that the deeper you go, the more offset the tunnel is in relation to the ground due to perspective issues.
